This is partly an archive of what my family eats. Weekly dinner menus, school lunch pics, etc. I like to refer back to my own ideas. Also, I blog about other "stuff". A medical journey I'm taking, things that inspire me, etc. I like having a place to spew the thoughts in my head, to clear space in there :)

Drink more water!
This is my new system for making sure I drink enough water. I fill it up my 4 cup water bottle at the beginning of the day, then try to stay on track with the times I've written on the side. Between 7am and 2pm I drink 4 cups, then I refill and drink another 4 cups between 2pm and 10pm. It really helps me! And it's made me realize how little water I've been drinking in the past. Drink up!

Pecan Squares
My dad ate these somewhere. He got the recipe. Gave it to me. And here they are. I will make the next batch for him. Wow. These things have 3 sticks of butter!!! THREE!!! Excuse me while I go hide what's left... Otherwise I will consume a whole years allotment of butter in one single evening. True story. They are a shortbread cookie crust with a pecan pie type filling on top. Baked to bubbling perfection.

Popsicle Stick Catapults
It's HOT!!! So we're playing inside. These Popsicle stick catapults are great for shooting cotton balls around the house. You just need sticks, hot glue, rubber bands, string, and plastic spoons.

Oatmeal
These are little individual servings of oatmeal. In the morning the kids just have to pour in boiling water from the kettle and stir :) I wrote the recipe on my oats lid. Each serving has 1/3 cup oats (I do regular, not quick), pinch of salt, 1 tsp sugar, 1 tsp chia seed, and dried fruit (blueberries today). After the boiling water absorbs in and cooks the oatmeal, the kids like to add a little milk. Some people add powdered milk to the dry mix. This oatmeal cooking method saves tons of time in the mornings! And it means everyone gets a warm bowl, even if they eat at different times. Give it a try!
Cracked Wheat Cereal
Jonathan's family grew up with a scoop of ice cream in their cracked wheat cereal. Why not!? We added some fresh peaches that are finally in season. My favorite!!!
Chocolate cake
Sunday night means treats! I did a layer cake with Nutella and chocolate chunk icing. Don't forget a glass of milk!

Zucchini anybody?!
I know this isn't exciting to anyone but me, but we got our first zucchini! I totally neglected it, so I'm quite happy to have it. Yum yum!
